Pasta with tuna, white beans & artichoke hearts
1 15oz can cannellini beans (rinse and drain), 1/3 c. olive oil, 1 t. garlic, 3 T lemon juice, salt, 1 12oz. can tuna, drained, 1- 6 oz. jar artichoke hearts w/marinade, 3 scallions, handful chopped flat leaf parsley, 1/2 lb. pasta.
Combine olive oil, garlic, lemon juice, salt. Mix with cannellini beans. Marinate 1 hour to 2 days ahead.
Add tuna, artichoke hearts, scallions, parsley to bean mixture. Optional: olives, capers, tomatoes. Gently stir in cooked pasta and serve. Be sure to heavily salt pasta.
